• Russian Egg and Shallot Sauce

  • Ingredients

    • 500gm shallots
    • 8 tblsp butter
    • 4 hard-boiled eggs
    • salt & pepper
  • Preparation

    Peel, trim and coarsely chop the shallots.

    Fry gently in the butter until the shallots are transparent - do not brown.

    Chop the hardboiled eggs and mix with the shallots, add salt & pepper to taste.

    Serve hot or cold with poultry or fish.
