The Original Spice Girl’s Friday Night Pizza

Start the pizza dough base in the morning before heading out for the day and tackle it when you get home in the afternoon. The delicious combinations here prove that spicy can be scrumptious!

Ingredients

Bread Dough Ingredients
1.5 cups warm water
Approx. 1 heaped tbsp yeast
½ tsp sugar
½ tsp Salt
A generous splash of olive oil

4 cups plain flour

Sauce Ingredients
1 can of crushed tomatoes in juice
Approx 5-6 large cloves of crushed garlic (equivalent of 2 tbsp)
1 tsp dried basil
1 tsp dried oregano
¼ tsp fennel powder
½ tsp salt
A splash of olive oil

Preparation

Dough Preparation

– In a large bowl, add the yeast, sugar, salt & olive oil to the warm water.
– Stir and rest until the yeast bubbles into a fragrant mass.
– Add the flour and mix with a wooden spoon until it all nearly comes together.
– Spray some oil onto your hands, remove the dough and knead a few times to make sure that everything is well mixed. Shape into a ball.
– Using the same bowl, spray the sides and replace the ball of kneaded dough.

- Cover with a damp teatowel and rest in a warm, comfy spot. (In the winter months, I have been known to leave the light on in the oven and sit the ball of dough to prove in there.)
– When fluffy and about doubled in size, remove from the bowl and knead a few times on an oiled surface.
– Divide into 4 portions for large pizzas, or 8 for smaller individual pizzas.

Sauce Preparation

Most times I don’t even bother cooking this sauce, I just mix it all up ready to spread on the pizza base.

Add some paprika OR ½ tsp of a Mixed Roots spice mix to liven things up a bit.

Pizza Preparation

I find that hand thrown / moulded pizza basess are softer and fluffier than rolled bases. They also hold the sauce better.
– Sprinkle some flour onto the kitchen bench and using your fingers shape a proved dough ball into a flat disk.

– Slather with pizza sauce.
– Sprinkle grated cheese on top and add dollops of mozzarella for extra gooey-ness.
– Add toppings of choice.
